The Jewel of the Open Ocean

From the deep blue waters of the Indian Ocean surrounding Mauritius, Madagascar, and Rodrigues Island, we source wild Dorado-internationally known as Mahi-Mahi or Common Dolphinfish (Coryphaena hippurus).

Fast-moving and unmistakable in appearance, Dorado is one of the most visually striking pelagic fish of tropical and subtropical oceans. Its elongated, laterally compressed body is crowned by a distinctive dorsal fin that begins above the eye and extends almost to its deeply forked tail. When freshly caught, the fish displays spectacular metallic blue-green and golden tones that gradually fade after landing.

Behind the extraordinary appearance is a highly versatile seafood prized for its clean flavour, firm texture, and large, moist flakes.

Wild-Caught in the Indian Ocean

Our Dorado is sourced from the waters of Mauritius, Madagascar, and Rodrigues, connecting international buyers with the fishing communities of the Indian Ocean.

Dorado is an open-ocean pelagic species, living primarily in offshore waters and often associated with floating objects. It feeds on smaller fish, crustaceans, and squid.

In Mauritius, dolphinfish has long been part of the country's offshore fishing activity, with FAO records identifying Coryphaena hippurus as the commonly caught dolphinfish around the island.

Naturally Delicate. Remarkably Versatile.

Dorado has a naturally mild, slightly sweet flavour and firm, flaky flesh, making it exceptionally versatile for professional kitchens.

Its clean flavour makes it ideal for:

Premium Fish Fillets • Grilling • Barbecue • Pan-Searing • Roasting • Ceviche • Carpaccio • Fish Tacos • Curry • Contemporary Seafood

A beautifully grilled Dorado loin can be served simply with citrus, herbs, olive oil, or a light sauce, allowing the natural character of the fish to remain at the centre of the dish.

From the Indian Ocean to the Finest Tables

Dorado is particularly suited to the culinary identity of the Indian Ocean.

In Mauritius, it can be transformed into a fragrant fish curry using local spices, tomatoes, herbs, ginger, garlic, and chilli-or simply grilled over an open flame for a more contemporary island presentation.

In Madagascar, the fish can be paired with the country's aromatic herbs, spices, coconut, citrus, and traditional coastal flavours.

In Rodrigues, its connection to the sea and island fishing culture makes it a natural ingredient for authentic local seafood dishes as well as premium restaurant cuisine.

One fish, many expressions-from traditional island cooking to sophisticated international seafood menus.

A Fish of Exceptional Character

Fresh Dorado is renowned for its striking natural colouring: brilliant metallic blue-green across the back, golden and silvery tones along the sides, and distinctive markings. After the fish is landed, these vivid colours naturally fade.

The species can reach approximately 2 metres in length, although the commonly encountered size is considerably smaller.

This combination of impressive appearance, rapid growth, firm flesh, and versatility has made Mahi-Mahi an established commercial and culinary species in many tropical and subtropical fisheries.
